• Cinnamon sugar for rim
• 4 ounces apple cider chilled
• 2-4 ounces prosecco or champagne chilled
• cinnamon stick for garnish

• Dip the rim of the champagne flute in caramel and then in the cinnamon sugar. I find it easiest to use a small plate to hold the caramel and cinnamon sugar separate for easy dipping.
• Pour in the apple cider and top off with the prosecco.
• Garnish with an apple slice or cinnamon stick if desired.
Note
• You can use a ratio of 2:1 or 1:1 for this recipe depending on how strong you want the drink to be.
• For a non-alcoholic version, use sparkling cider in place of prosecco or champagne.

A simple and basic Mai Tai is easy to make. This rum cocktail has a delicious mix of almond, lime, and tropical fruit flavors. Great for summer!
Ingredients
• 1.5 oz white or Jamaican rum
• .5 oz Triple sec
• 2 oz orange juice
• 2 oz pineapple juice
• 2 teaspoons lime juice
• 2 teaspoons orgeat syrup
Optional garnishes
• Maraschino cherries with stem
• Pineapple wedge
Instructions
• Add ice to a cocktail shaker and fill a rock glass halfway with ice cubes.
• Pour all the liquid ingredients into the cocktail shaker. Shake for ten seconds and strain over ice in rock glass.

Notes
• You can make your own orgeat syrup by boiling a tablespoon of water and tablespoon of almonds in 1/4 cup of water until they reduced to a thick syrup. You can also buy pre-made orgeat syrup (almond simple syrup) at any specialty grocer.
• If you are making these for a party, assemble garnishes ahead of time on cocktail picks and store in a plastic container in the fridge until ready to serve.
